  • Preheat oven to 350°F. Beat butter and granulated sugar in large bowl with electric mixer on medium speed until light and fluffy. Add bananas, egg and lemon juice; mix until well blended. Mix flour, baking powder, cinnamon and salt. Gradually add to banana mixture, mixing well after each addition. Pour into greased 9x5-inch loaf pan.
  • Bake 1 hour or until bread springs back when lightly touched. Cool 10 min.; remove from pan to wire rack. Cool completely.
  • Dissolve instant coffee in hot water in medium bowl. Add powdered sugar; beat until well blended. Drizzle over bread. Cut into 16 slices to serve.

Special Extra

Add 1/2 cup chopped PLANTERS Walnuts or BAKER'S ANGEL FLAKE Coconut to the glaze mixture before drizzling over bread.

Lemon Juice Yield

One medium lemon yields about 3 Tbsp. juice. To get the most juice from lemons and other citrus fruits, bring the fruit to room temperature. Use your palm to gently press and roll the fruit on the countertop a few times to release the juices inside before squeezing.

This is delicious and everyone who I served it to agreed--they were all pleasantly surprised by the glaze !I added chopped walnuts to the batter and I HIGHLY recommend you double the glaze--it's fantastic! Pour half on top and let it sink in for 10 mins or so, then pour the rest on. Yum!

Rated 4 out of 5 by from This turned out very well! This turned out very well! The cinnamon and lemon juice added a little extra spice than most other banana breads, but it was a nice change. My only complaint is that mine turned out a little dry so next time I will be adding more juice/water.

Rated 3 out of 5 by from The bread was okay - too dense for me and not banana-y enough. The bread was okay - too dense for me and not banana-y enough. Also the coffee glaze needs to be thicker. Since this bread is really more like a bar, it would benefit from a thick coating for frosting to sweeten the deal.
