IN a large bowl cream together butter, sugar, and gelatin until fluffy. Mix in the flour.
WRAP dough in plastic wrap. Refrigerate for two hours.
PREHEAT oven to 350ºF.
PLACE the dough onto a floured work surface and sprinkle with flour. Roll out into a sheet 1/4-inch thick.
CUT into shapes with floured cookie cutters and place 1-inch apart on ungreased cookie sheets.
PLACE onto cookie sheets and bake for 10-12 minutes until the edges are lightly brown. Cool on cookie sheets 3 min. Remove to wire racks; cool completely.
