  • Heat oven to 425°F.
  • Whisk sour cream, 1/2 cup milk and 3 Tbsp. sugar in large bowl until blended. Add baking mix; stir just until moistened. Spread onto bottom of 9-inch round pan sprayed with cooking spray. Bake 12 to 15 min. or until golden brown. Cool 10 min.; remove to wire rack. Cool completely.
  • Beat pudding mix and remaining milk in medium bowl with whisk 2 min. Stir in half the COOL WHIP. Toss strawberries with 1/3 cup sugar.
  • Cut cake horizontally in half; stack layers on plate, filling with half the strawberry mixture and all the pudding mixture. Top with remaining COOL WHIP, then strawberry mixture.

Make Ahead

Bake the cake up to 24 hours ahead of time, then split the cake into layers after it is cooled and store in airtight container at room temperature. Toss the sliced berries with the sugar and refrigerate until ready to use. And refrigerate the COOL WHIP overnight to thaw.

Rated 5 out of 5 by from This is the absolute BEST shortcake I have ever had. This is the absolute BEST shortcake I have ever had. I am a strawberry shortcake fanatic and have been for over 35 years. I made this and ended up eating the entire thing over 2 days. I could not stop. It was so good. I will agree that it is virtually impossible to slice the cake part in 1/2 as it did crumble but that is what the Bisquick does. It was thin. I will probably make 2 next time I make it. It was even really good the next day when it had been in the refrigerator. I would recommend this recipe to anyone. I have read some of the ratings on the pudding being runny, etc., but if you follow the directions, it is impossible for it to turn out bad.

Rated 3 out of 5 by from I actually didn't love this recipe. I actually didn't love this recipe. It was definately fun to make, but the picture looked so much tastier than it actually was. I expected the cake part to be like angel food cake and it is nothing like angel food cake lol, maybe that's where I went wrong. It was much denser and reminded me of a giant biscuit from a breakfast joint. That being said, the pudding part is delicious and who doesn't like sweetened strawberries!?! :) I think if I made this again, I would try and change the cake to an angel food cake and see if that tastes better. All in all, I served it at a Father's Day Barbeque that we had and everyone there said that they loved it so you might as well give this beautiful looking dessert a try! :)

Well, first of all the cake was very brown and looked done but upon cutting it, I noticed it was still gooey and doughy inside. But that didn't matter because it completely crumbled and fell apart anyway. The "pudding" was also a disaster, it was nothing but vanilla flavored milk even with the cool whip added. It didn't even come close to the sort of texture needed to layer a cake with. I give it 2 stars because I went out to buy a pound cake, sliced it, and spooned the "pudding" stuff and the strawberries over it, and put the remaining cool whip on top. Thank goodness, that tasted good, otherwise there would have been no dessert for fathers day.

Simple, keeps at least overnight without fridge, and tastier than you might expect for something that involves 3 prepared foods (biscuit mix, Cool Whip and pudding mix). That also makes it quick! One problem: double the cake recipe and cook in two pans, I knew I couldn't cut the thin cake in half so I had to bake a second one. Yes the cake is like a biscuit or scone, it's made from biscuit mix; not really a shortcake imo but it is a fairly light (not airy but not rich either), not very sweet cake. The vanilla pudding & coolwhip filling is great, sweet & custardy (a bit grainy) though you could try chocolate or some other flavour for variety. I measured 3 cups strawberries and then sliced them, and it was more than enough.

Rated 5 out of 5 by from I loved this! I loved this! Tasted Strawberry shortcake before but never made it before. Only if I knew how easy it was! Only thing I didn't like was that it is so small. I could eat a whole one by myself. Family loved it. It was great. I will be making it again very soon. About to go out and get some more strawberries now... I would like to add more of the pudding and cool whip mixture though... Even after it sits in the frige for a while, as long as the strawberries are fresh... it tastes great. I actually think it tastes better...

I had huge compliments on this strawberry shortcake. the "cake" part is a little thin, but, in the olden days, when one made a strawberry shortcake, the cake part was more like biscuit and that is the way this one is. One of my friends, who loves strawberry shortcake and orders it everytime he has the opportunity said, this was the best strawberry shortcake he had ever tasted and he has tasted many. I thought it was good. I am making it again today, and I think I will put more strawberries in, and I certainly put more than 3 Tblspn sugar on the strawberries. Simply because the strawberries we get here are not all that good and need a little help. I also put some of the pudding into the last part of the coolwhip. I thought it was a super recipe and so did everyone who tasted it.

I made this recipe for our Memorial day picnic and out of 4 different desserts this one was the first to go. It was excellent. Lucky I made 2 of them. My girlfriend wants me to make this for her 4th of July picnic. Although next time I would add more coolwhip to the pudding mixture to make it fluffier,it was a bit dense also have extra strawberry mixture on hand. The vanilla in the biscuit mixture is a good idea too. Will try that next time. Will definately be making this again.

Rated 5 out of 5 by from I alterted the ingredients slightlly. I alterted the ingredients slightlly. I used the reduced fat bisquick and added splends instead of sugar and used fat free milk. I also used sugar free/fat free vanilla pudding mix and used fat free whip topping. I didn't put any sugar on the strawberries either. It was still very sweet. My Dad is a Diabetic and he loved it. My kids didn't like the biscuit part so the next time I will make it with a more cake like center. Other than that it was enjoyed by everyone!
