This dish was awesome, and felt healthy to eat it too. I made it for my husband and myself for dinner. I would definitely make it again. A shortcut used: I bought the Ginger that is sold in a tube so that none is wasted any and it lasts longer in the refrigerator. I buy the pre-minced Garlic that is sold in a jar (sold at Costco). We do not like brown rice, so we had short-grain rice like the rice used in Japanese restaurants. We also don't like onions, so those were omitted. Everything else was by the recipe. The only thing I might do the next time is add some bell peppers.
