  • Mix cornstarch and soy sauce until blended. Stir in broth and 2 Tbsp. dressing.
  • Heat remaining dressing in large skillet on medium-high heat. Add shrimp, ginger and garlic; stir-fry 3 min. or until shrimp turn pink. Add bok choy; stir-fry 2 min. Add peas and onions; stir-fry 2 to 3 min. or until crisp-tender. Stir in soy sauce mixture; bring to boil, stirring constantly. Simmer on medium heat 1 to 2 min. or until thickened, stirring frequently.
  • Add tomatoes; cook and stir 1 min. or until heated through. Serve over rice.

Substitute

Substitute baby spinach leaves for the bok choy.

Special Extra

Top with additional sliced green onions and toasted sesame seed just before serving.

Rated 5 out of 5 by from This dish was awesome, and felt healthy to eat it too. This dish was awesome, and felt healthy to eat it too. I made it for my husband and myself for dinner. I would definitely make it again. A shortcut used: I bought the Ginger that is sold in a tube so that none is wasted any and it lasts longer in the refrigerator. I buy the pre-minced Garlic that is sold in a jar (sold at Costco). We do not like brown rice, so we had short-grain rice like the rice used in Japanese restaurants. We also don't like onions, so those were omitted. Everything else was by the recipe. The only thing I might do the next time is add some bell peppers.

Rated 5 out of 5 by from Very easy and really yummy! Very easy and really yummy! We didn't have ginger on hand so we omitted that, we used asparagus instead of snap peas and we used baby spinach instead of bok choy. It was great. We'll definitely make it again.
