  • Prepare cake batter and bake as directed on package for 24 cupcakes; cool completely.
  • Spoon 1/3 cup COOL WHIP into large resealable plastic bag. Add marshmallows; seal bag. Shake until marshmallows are evenly coated. Place decorating sugar in small bowl. Add marshmallows, 1 at a time; toss until evenly coated with sugar. Place in single layer on baking sheet. Decorate with decorating gel to resemble monster faces as shown in photo.
  • Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in remaining COOL WHIP. Spoon 1-1/2 cups pudding mixture into small bowl. Add food coloring; stir until blended. Spoon into small resealable plastic bag. Snip one corner off bottom of bag.
  • Cut 1-inch piece from top of each cupcake with small knife; remove and reserve for snacking or other use. Pipe pudding mixture from bag into holes in cupcakes; spread remaining pudding mixture onto tops of cupcakes. Top with marshmallows.

Fun Idea

For more colorful cupcakes, add 1 or 2 drops each yellow and red food colorings to the remaining (plain) pudding mixture to tint it orange before piping into and spreading onto tops of filled cupcakes.

Variation

Omit black decorating gel. Prepare and frost cupcakes as directed. Cut black licorice into small pieces. Use to make monster faces on the coated marshmallows before placing on tops of frosted cupcakes.

I LITERALLY just stored these little suckers in the refrigerator about half an hour ago... I noticed they started to "bleed," I don't know exactly but I'm assuming it's just the condensation from the cold air. But it may look neat because it may be substituted as slime. I was hoping for a clean-cut version just like in the picture, but we all know how those are visionary masterpieces by set designers. I am attending my little brother's school Halloween party tonight and I wanted to bring something cool!

These cupcakes got great reviews at the Trick-or-Treating/Halloween Party I took them to. I made the top icing orange but it turned out pastel and kind of threw off the whole eye-appeal. Fun to make even though a little messy. I put a toothpick in the end of the marshmallow to roll it in the cool whip and the sugar- made it easier. I will absolutely make them again next year!

I made these for my son's 10th birthday and the entire 4th grade class "ooh and ahhed". His birthday is right around Halloween, so I colored the frosting orange and kept the little "monsters" green. They looked and tasted wonderful. I love the pudding frosting...YUMMY!! My son said they were the coolest cupcakes he had ever seen...that was enough approval for me :-)

Rated 5 out of 5 by from This recipe takes no time at all to make. This recipe takes no time at all to make. We went with the orange icing, my daughter rolled the marshmallows in the green mixture. We also cut our marshmallows in half and they looked just as great! We also used rainbow cake mix and did not use any pudding mixture, we thought pudding would be too messy and this also cut down on the production time.

They were delicous and fun to make, but I only gave them 4 stars because I feel there's an error in the recipe. In order to cover all the marshmallows, I had to use 1/2 c. of decorating sugar. So, if you'd like to make these, be prepared! Otherwise, the recipe was great!

Rated 4 out of 5 by from This weekend I invited my mom and sister over and we made these for the kids. This weekend I invited my mom and sister over and we made these for the kids. I did the cupcakes, my mom prepared the icing and my sis did the marshmellows. The moms enjoyed cooking the treats and the kids enjoyed eating them. These taste very good and is a nice treat instead of the traditional Halloween candy.

My Son's birthday is Oct 30, so every year we make something cute/ghoulish for school, he turned 5 this year. He and his classmates just loved these. I used the frosting to coat the marshmellos instead of cool whip, I had no problem with them running. They were easy! I wiwould make them again!

Rated 5 out of 5 by from This recipe turned out fabulous. This recipe turned out fabulous. The whipped icing inside the cupcake was a great idea. It made my Halloween party delightful. I ran out of green sugar though, and I had to use Wilton green food spray. This was one of the best cupcakes I've ever had. 5 stars, 6 if I could!
