  • Preheat oven to 400°F. Prepare corn muffin batter as directed on package; pour into 8- or 9-inch round layer pan. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool slightly.
  • Meanwhile, brown meat in large skillet on medium heat; drain. Stir in barbecue sauce. Reduce heat to low; simmer 10 to 15 minutes or until heated through, stirring occasionally.
  • Cut cornbread into 4 wedges; place 1 wedge on each serving plate. Spoon about 1/2 cup of the meat mixture over each cornbread wedge. Top evenly with the cheese, tomatoes and green peppers.

Substitute

Prepare as directed, using BULL'S-EYE Original Barbecue Sauce.

Variation - Taco Sloppy Joes

Omit barbecue sauce. Brown meat in large skillet. Add 1 pkg. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix. Prepare as directed on package. Continue as directed.

Rated 4 out of 5 by from I liked the cornbread with the sloppy joes. I liked the cornbread with the sloppy joes. It was very tasty. However, I cut up fresh tomatoes, onion, and peppers in with my meat (I used ground turkey) and sauce and let it simmer for 15 minutes. This added good flavoring to the somewhat lacking meat and sauce mixture. I topped it with the shredded cheese. Served it with a side garden salad. Wonderful!

At first I wasn't thrilled about making this one, but I figured I'd try it to see if it would be good...My entire family loved it. My picky husband and children. I did not put the tomoatoes and green onion on my childrens, they loved it with just cheese. Very good!

Rated 3 out of 5 by from I thought this was ok, not great but not bad. I thought this was ok, not great but not bad. I cooked the beef with some onions & green peppers and I added a little crushed red pepper when I was cooking in the BBQ sauce. It was filling I'll give it that but not my favorite.

Rated 4 out of 5 by from I love this! I love this! I actually changed it up some now it's better and easier: Instead of chopping up and throwing the the pepper and tomato I add about 3 tbsp of salsa after the bbq has cooked in and it makes it so much better!!

I followed the recipe for cooking everything but then I added the meat mixture, tomatoes and cheese on top of the cornbread and cooked it in the oven for five additional minutes. My family really enjoyed this meal.
