Look for apples that are firm and well colored with smooth, blemish-free skins. Choose the variety that best suits your needs. All-purpose apples for both eating raw and cooking uses include Cortland, Granny Smith, Jonathan, Fuji, Gravenstein, Empire, Jonagold, McIntosh, Pippin, Spy and Winesap. Best snacking and salad apples are Gala, Golden Delicious and Red Delicious. When cooking, use Rhode Island Greening, Rome Beauty or York Imperial.

My family LOVES this recipe! I am also asked to bring this to potlucks at work. Easy to make. We serve as a side on thanksgiving but can be a yummy dessert with vanilla ice cream. I did not change anything with the recipe. I will state do not overtook the apples. If the cook time ends, put in a 9x13 pan then put the Nilla wafer mix on. This is how I serve at potlucks. Enjoy!
I had to double this(12 kids)myself and hubby almost didn't have enough. Very delicious needled to say. I did omit the cranberries and nuts.
