  • Combine flour and bouillon; rub onto all sides of roast. Place in slow cooker.
  • Sprinkle with 1 tsp. thyme; cover with lid. Cook on LOW 8 to 9 hours (or on HIGH 4 to 5 hours).
  • Add mushrooms to slow cooker. Pour gravy over mushrooms; cook, covered, on HIGH 30 min. or until mushrooms are tender and gravy is thickened.
  • Transfer roast to cutting board, reserving gravy mixture in slow cooker. Let stand 10 min. Meanwhile, cook noodles as directed on package, omitting salt.
  • Slice roast. Drain noodles; place on serving plates. Top with meat, gravy mixture and sour cream. Sprinkle with remaining thyme.

Substitute 1/2 tsp. dried thyme leaves, crushed, for the fresh thyme, sprinkling all of the thyme over the roast before cooking in slow cooker as directed.


This slow-cooker recipe can also be prepared using any other similarly sized cut of beef, such as a bottom round roast, eye round roast or rump roast.

Rated 5 out of 5 by from Easy receipe and wonderful taste I made this after I received my Food and Family magazine. I did add onions to this and only had dried thyme so used that. I also roasted parsnips and carrots which on added thyme to as well. It was a delicious meal. Everyone loved it. The meat was tender and when I picked it up it was falling apart. Left overs were just as good. Will make this again.

Rated 1 out of 5 by from Tough and dry--where's liquid? Thought this sounded easy enough, was suspicious of no braising liquid. Final 30 minutes has gravy, but by then my 3lb roast was tough and dry. Put in another 30 min longer hoping Pioneer Woman's phrase "If the meat's still tough, it ain't done enuf" would hold true--not in this case. I think you should reconsider not having any liquid in there to keep it moist :(
