For best results, do not prepare this recipe using the HIGH heat setting on your slow cooker.
Since most slow cookers tend to have a hot spot on the back side of the slow cooker, we cover the hot spot with foil to help prevent this delicate strata from burning.

I halved this and made it is a smaller slow cooker. It filled the whole cooker. Too much bread for me. Leaked through the foil, could not get the foil to peal off nor use it to lift the strata out of the pan. Taste was good, but not worth the effort.

This was pretty good and pretty easy. I would make a few changes next time I make it. All the good stuff (bacon and cheese) collects on top so I would put half the bread in first, pour half the egg mixture and then layer more bread and egg. I did add some cut up breakfast sausages as well. I think you could easily add veggies (peppers, onions, mushrooms, spinach) to dress it up a bit. My doesn't like that stuff so I left it close to the original recipe. I would also add a little more spice to it, maybe some cajun seasoning.
