I love this recipe... I give it 4 stars instead of 5 because I made changes. With changes, it's a 5.
I used 2 large red peppers instead of green.
I chopped my potatoes (left the skin on) instead of slicing them.
I used boneless chicken tenders instead of thighs, and I cut them into 1 inch cubes. You have to season your chicken well to keep it from being bland, so I seasoned my chicken with pepper, garlic salt, onion powder, and paprika.
I also threw in about 3 cloves of minced garlic. This recipe was much better than I expected, and the peppers gave the potatoes a wonderful flavor. The cheese sauce on top was an excellent addition.
