  • Brown meat in large skillet; drain. Stir in enchilada sauce, beans and tomatoes.
  • Mix cream cheese and milk in medium bowl until blended. Stir in 1-1/2 cups shredded cheese.
  • Spoon 2 cups meat sauce into slow cooker; top with layers of half each of the noodles (broken to fit) and cheese mixture. Cover with 2 cups meat sauce; top with remaining noodles (broken to fit), cheese mixture and meat sauce. Cover with lid.
  • Cook on LOW 4 to 6 hours or until liquid is absorbed. Sprinkle with remaining shredded cheese; let stand, covered, 10 min. or until melted. Uncover; let stand 15 to 20 min. before serving. Serve topped with olives and cilantro.

Rated 4 out of 5 by from Really good with one addition.. I followed the recipe exactly with one exception, I mixed a packet of taco seasoning in with the meat. Reading the recipe I knew that I had to add some spices of some kind! I used one can of hot red enchilada sauce and one can of mild green enchilada sauce. My bf didn't care for it (he's one of those that isn't crazy about tex-mex flavors. We stay together anyway :-) ) so I got left overs all week long and they got better and better!

Rated 5 out of 5 by from An Absolute Favorite We LOVE this recipe! ! I usually double it and am able to feed 3 for several days. Great reheated. Especially like the cheese mixture... I use 3 cream cheese and double the milk and shredded cheese. The extra cream cheese makes it very creamy.

Rated 4 out of 5 by from Different and tasty I thought this was a really nice and very easy meal to make. I do like the idea the other review left of adding taco seasoning mix to the meat itself. I think it would make it tastier. I used the no-bake noodles and have a rectangular crock pot which made it perfect for a lasagna. The noodles were soft, not burnt nor mushy. Everyone enjoyed this recipe and I will make it again soon.

Rated 4 out of 5 by from easy Keep black olives out of recipe, for that matter, keep them out of all recipes! Does not matter how much you like black olives, they are so strong that thewy dominate every recipe they are a part of. The other more subtle flavors get lost. When recipes do call for them.....serve them on the side. In my opinion, ingredients should ADD to the overall taste, not dominate it!!!!
