  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels; refrigerate until ready to use.
  • Add onions to drippings in skillet; cook and stir 5 min. or until crisp-tender. Stir in flour; cook and stir 1 min. Add 1 cup broth; cook and stir 2 min. or until sauce comes to boil and thickens. Pour into slow cooker. Stir in remaining broth. Add potatoes; cover with lid. Cook on LOW 4 to 5 hours (or HIGH 2 to 3 hours).
  • Use slotted spoon to transfer 4 cups potatoes to medium bowl; mash until smooth. Add 1-1/2 cups cheese to remaining mixture in slow cooker; stir until melted. Stir in mashed potatoes and milk; cook, covered, 5 min. or until heated through.
  • Place bacon on paper towel-covered microwaveable plate. Microwave on HIGH 20 to 30 sec. or until heated through. Serve soup topped with bacon, remaining cheese, sour cream and chives.

Substitute

Prepare using KRAFT Shredded Sharp Cheddar Cheese.

Serving Suggestion

Serve this hearty soup with a whole grain roll, and a quick bagged green salad tossed with your favorite KRAFT Lite Dressing.

Rated 5 out of 5 by from This was a great hit and super easy to make! This was a great hit and super easy to make! I did make some changes, though, that I would recommend others do. This recipe needs salt & pepper, and I added a few dashes of crushed red pepper to mine as well. To feed four adults, I'd recommend doubling the recipe, to make sure there is enough for everyone to get at least two bowls. I did not mash the potatoes, since we like them in cubes, so I just added the 1/2 cup of milk directly into the pot. I also added a quarter of a stick of cream cheese at the end and let it melt in, which made it really creamy and smooth.

Rated 3 out of 5 by from I made this recipe today and my soup turned into mashed potatoes. I made this recipe today and my soup turned into mashed potatoes. I cooked it on high in my crock pot. I set it for 5 hours. I checked it 20 minutes before the time was up and it looked done so I did what the recipe said and it turned into mashed potatoes. The flavor was good but I was disappointed. I'm assuming that it cooked to long. Any suggestions would be great would love to try again.

I made a few additons and changes...I used turkey bacon, I added 2 minced garlic cloves in with the onions towards the end of their cooking, and also added a few shakes of crushed red pepper with the flour. I also used lots of cheese cause we love it:) It came out perfect, I will definetley be making this again!

Rated 5 out of 5 by from This recipe turned out very good! This recipe turned out very good! It's a bit labor intensive for a crock pot recipe but worth it. I cooked the bacon and prepared everything the night before, placed it in the fridge overnight then started it in the morning before I went to work. Once home it only took a few minutes to put everything together. This recipe is a keeper!

I started this soup not realizing that it was a slow cooker meal, but since I bought the ingredients, I made this on the stove top. The only difference was that I cut the potatoes in small cubes. It accelerated the cook time. I started this soup at 1:30 and it finished at 4:00. Great for a cold football Sunday!

Rated 3 out of 5 by from Overall, the taste was just ok. Overall, the taste was just ok. My kids said it didn't have much flavor. It also took too long just to get it ready to go in the crockpot. Needless to say no flavor + too much time=not cooking this one again. Still searching for a wonderful and EASY potato soup recipe.

I thought the bacon grease would add a lot of flavor. It definitely is lacking. It was more like bland mashed potatoes. Still in search of a potato soup recipe.

Only changes I made was to use half and half instead of milk, used Colby cheese as we were out of cheddar, and used my cast iron pot on the stove rather than crock pot. Will definitely make again.
