Slow-Cooker Santa Fe Chicken

Chicken breasts are at their moist and tender best in this Santa Fe-style slow cooker dish. Top with crushed tortilla chips and cilantro on a bed of rice.

What You Need

small  boneless skinless chicken breasts (1 lb.)

can  (15 oz.) black beans, rinsed
1
pkg.  (10 oz.) frozen corn
1
tub  (10 oz.) PHILADELPHIA Santa Fe Blend Cooking Creme

Tbsp.  flour
1
cup  TACO BELL® Thick & Chunky Salsa, drained
3/4
cup  fat-free reduced-sodium chicken broth
1
cup  long-grain brown rice, uncooked
1
cup  crushed tortilla chips
2
Tbsp.  chopped fresh cilantro

Make It

PLACE chicken in slow cooker; top with beans and corn. Whisk next 4 ingredients until blended; add to slow cooker. Cover with lid. Cook on LOW 7 to 8 hours (or on HIGH 3 to 4 hours).

COOK rice as directed on package.

SERVE rice topped with chicken mixture, crushed chips and cilantro.

Serving Suggestion
Serve with a crisp mixed green salad tossed with your favorite KRAFT Dressing to round out the meal.
Variation
Prepare as directed, decreasing the broth to 1/2 cup and substituting 1 undrained can (10 oz.) diced tomatoes and green chiles for the salsa.
