  • Place chicken in slow cooker sprayed with cooking spray. Mix next 5 ingredients until blended; pour over chicken. Cover with lid.
  • Cook on LOW 6 to 8 hours (or on HIGH 3 to 4 hours).
  • Spoon rice onto platter. Remove chicken from slow cooker, reserving sauce in slow cooker; place chicken on rice. Skim fat from surface of sauce; discard fat. Pour 1/2 cup sauce over chicken; discard remaining sauce.
  • Top chicken with cilantro and nuts.

Serving Suggestion

Serve with a smart side, such as a hot steamed fresh vegetable to round out the meal.

Special Extra

Garnish with lime wedges before serving.

I used boneless thighs instead of bone in thighs and didn't cut back the time, so they were way overdone. The flavor was good. Besides it being overdone, the kids liked it. It could have used a little more kick but I'm not sure how... I'd make this again but maybe with chicken breasts and not so long!

Rated 5 out of 5 by from Great flavor, time saver This was simple and delicious. Took the minimum time to cook & served right from pot! Made rice as suggested, almost came to blows over pot scraping! Will definitely double next time. Would be great served in a wrap, with other Asian veggies.
