  • Place chicken in slow cooker. Mix next 5 ingredients until blended; pour over chicken. Cover with lid.
  • Cook on LOW 6 to 8 hours (or on HIGH 3 to 4 hours).
  • Spoon rice onto platter; top with chicken, reserving sauce in slow cooker. Skim fat from sauce; discard fat. Pour 1/2 cup sauce over chicken; discard remaining sauce. Top chicken with cilantro and nuts.

Serving Suggestion

Serve with a smart side such as a steamed vegetable to round out the meal.

    Wow this was a great dish. Instead of cooking it with chicken I used steak tips. It was amazing. A must cook again.

    Although this looks really delicious, it is 14 points on the Weight Watchers plus system, so I don't think it will work!
