  • Crumble sausage into large skillet. Add onions; cook until sausage is browned, stirring frequently. Drain. Transfer to slow cooker.
  • Add tomatoes, peppers and tomato paste; mix well. Stir in beans; cover with lid. Cook on LOW 3-1/2 to 4 hours (or on HIGH 2-1/2 to 3 hours).
  • Stir in herbs; cover. Cook on HIGH 10 min.; stir. Serve topped with cheese.

Rated 5 out of 5 by from Made it today since it was so cold and windy outside. Made it today since it was so cold and windy outside. My husband said it was "excellent." Since green peppers give me a roaring case of indigestion, I used a yellow and a red pepper instead of the green pepper, and a can of Great Northern beans instead of the cannellini beans. Since there is "just the two of us," we have enough leftovers for tomorrow. Will definitely make it again, and maybe some hot crusty Italian bread to go with it. Very, very good recipe. Few ingredients and fast.

The only variation I had to make was the use of Great Northern beans as my grocery store did not carry the cannellini beans. It was wonderful!!! Of the fifteen crockpots of chili made, I won the Gold Medal and a Top Chili Cooker Chef's Hat! My pot was the only one emptied, and everyone wanted the recipe. This recipe will be made many times this Winter, and I give it an A+++!

The store I went to didn't have italian pork sausage on hand, but they did happen to have italian chicken sausage so I used that. It was delicious! The only thing I didn't like about it - no leftovers!
