Slow-Cooker Vegetable Lasagna

What You Need

Tbsp. oil

lb. sliced fresh mushrooms

red peppers, coarsely chopped

pkg. (6 oz.) baby spinach leaves

jar (24 oz.) spaghetti sauce

container (15 oz.) POLLY-O Natural Part Skim Ricotta Cheese

pkg. (8 oz.) KRAFT Shredded Italian* Five Cheese with a TOUCH OF PHILADELPHIA, divided

cup KRAFT Grated Parmesan Cheese, divided

whole wheat lasagna noodles, uncooked

Make It

HEAT oil in large skillet on medium heat. Add mushrooms and peppers; cook and stir 3 min. Remove from heat. Add spinach; stir until wilted. Stir in spaghetti sauce.

MIX ricotta, 1-1/2 cups shredded cheese, 2 Tbsp. Parmesan and egg until blended.

SPOON 1-1/2 cups sauce into slow cooker; top with layers of half each of the noodles (broken to fit) and ricotta mixture. Cover with 2 cups sauce. Top with remaining noodles (broken to fit), ricotta mixture and sauce. Cover with lid.

COOK on LOW 4 to 5 hours (or on HIGH 2 to 3 hours) or until liquid is absorbed. Sprinkle with remaining cheeses; let stand, covered, 10 min. or until shredded cheese is melted.

Delicious! I roast eggplant slices and add that to the recipe. My husband loves it and it really is easy!

This makes alot ! Pretty good I used what I had in the house. Substituted (lasagna noodles) with penne pasta Added 2 cooked chicken breasts (diced and browned in pan) I will make again

I replaced the ricotta with crumbled, sauteed tofu. It was so good, my husband said we need to make this recipe again!

I have made this a few times, and last was the best. Cottage cheese instead of ricotta, cheaper and delicious, fresh basil leaves, yummy. Greater the next day!

this was amazing! I was really surprised because there are little ingredients! I even forgot to add the shredded cheese to the mixture of ricotta cheese but it still turned out delicious! just added the cheese to the top of each serving.

I added zucchini, broccoli, and onion and cooked veggies in microwave. I also added garlic powder to the cheese mixture. Very good and very easy!
