Smart-Choice Crunchy Tortilla and Beef Skillet

Topped with melted cheddar cheese and crunchy tortilla chips, this quick-to-make beef skillet may well become your new favorite go-to weeknight dish.

What You Need

lb.  extra-lean ground beef
can   (11 oz.) corn, drained
can   (8 oz.) tomato sauce
Tbsp.   chopped canned chipotle peppers in adobo sauce
cups   lightly crushed low-fat baked tortilla chips
cup  KRAFT 2% Milk Shredded Cheddar Cheese
cup  BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
cup  chopped fresh cilantro

Make It

BROWN meat in large skillet. Stir in corn, tomato sauce and peppers; bring to boil. Cook on low heat 5 min.

TOP with crushed chips and cheese; cover. Cook 2 to 5 min. or until cheese is melted.

SERVE topped with sour cream and cilantro.

Small ingredient substitutions, such as extra-lean ground beef, baked tortilla chips, KRAFT 2% Milk Shredded Cheddar Cheese, and BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream, result in a savings of 90 calories and 12g of fat, including 5g of saturated fat, per serving when compared to a traditional recipe.
Substitute chopped seeded fresh jalapeños for the chipotle peppers.
Cooking Know-How
Cook ground beef thoroughly and evenly. The color of the raw ground meat can vary from bright red to light pink. Do not rely on the color of the meat to check for doneness but use an instant read thermometer instead. Ground beef should be cooked to an internal temperature of 160°F.
