  • Spray large saucepan with cooking spray; add chicken. Cook on medium-high heat 3 min. on each side or until lightly browned. Remove from pan; set aside. Drain.
  • Cook onions and peppers in dressing until tender. Add chicken, sausage, tomatoes, broth and pepper. Bring to boil; reduce heat to low. Simmer 30 min. or until chicken is cooked through.
  • Add shrimp; cook 5 min. or until shrimp is opaque. Spoon over rice; top with sour cream and cilantro.

This hearty stew can be made a day ahead and reheated.


Substitute andouille sausage for smoked sausage to give this stew a Cajun influence.
