Heat skillet on medium heat. Cook sandwich 5 min. on each side or until cheese is melted and sandwich is golden brown on both sides, gently pressing down top of sandwich with spatula to flatten slightly as it cooks.
If packing for a brown-bag lunch, omit the olive oil and serve sandwich cold.
Serve with a mixed green salad and your favorite fresh fruit to round out the meal.

I liked this recipe a lot! A different take on grilled cheese :) I omitted the tomatoes and used regular sliced cheese and it was yummy....the Dijon was not overpowering at all....just a hint here and there. I cooked it on the George Foreman grill and served it with tomatoe soup!
