Serve over tender salad greens, such as Bibb lettuce, mixed baby greens or spinach. For more color and flavor, add cut-up fresh fruit, such as oranges, seedless grapes, strawberries and/or pears to the salad.
Shallots taste like a combination of onions and garlic, although they are milder than either. Resembling garlic more than onions, shallots grow with multiple cloves covered in a thin papery skin. Choose shallots that are firm and avoid any that are wrinkled or have sprouts.
Substitute fresh clementine or tangerine juice for the orange juice. Both are easy to peel, typically seedless, and have a sweet and tangy flavor.
