  • Cook and stir bacon in large saucepan on medium heat until crisp. Remove bacon from pan with slotted spoon, reserving 1 Tbsp. drippings in pan. Drain bacon on paper towels.
  • Add onions, garlic, paprika and bay leaf to drippings in pan; cook and stir 10 min. or until onions are tender. Add broth and potatoes; stir. Bring to boil; simmer on medium-low heat 10 min. or until potatoes are tender.
  • Discard bay leaf. Blend soup, in batches, in blender or food processor until smooth. Return soup to saucepan; stir in bacon. Serve topped with green onions.
