  • Preheat oven to 325ºF. Beat cream cheese, powdered sugar, butter and vanilla with electric mixer on medium speed until well blended. Add flour and baking soda; mix well. Cover. Refrigerate 1 hour.
  • Roll dough to 1/8-inch thickness on lightly floured surface. Cut into 66 cookies, using 2-inch festive cookie cutters. Sprinkle half of the cookies with colored sugar. Place all cookies, 2 inches apart, on ungreased baking sheets.
  • Bake 12 min. or until lightly browned. Cool on baking sheets 1 min. Remove to wire racks; cool completely.
  • Spread bottom side of each of the plain cookies with about 1 tsp. marshmallow creme; cover with remaining sugar cookies, bottom-sides down, to form sandwiches. Drizzle with melted chocolate.

How to Soften Cream Cheese

Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of cream cheese.

I've made these cookies twice this year, once for Thanksgiving and again for Christmas. I gave them away to neighbors & family. They were a BIG hit! I'll probably make them again for Valentines, 4th of July, BBQ's etc. The cookies are delicious! The downside is that if you are making a lot of cookies, then it will be time consuming due to rolling the dough, cutting out shapes and baking.

Rated 4 out of 5 by from I cut these into hearts and gave them to my boyfriend for Valentine's Day. I cut these into hearts and gave them to my boyfriend for Valentine's Day. It took me three and a half hours to make the dough, roll it out into shapes, bake the cookies, and decorate them, but it was well worth it. My boyfriend said they looked professional and tasted great. In fact, everyone in his house loved the cookies, and his mom and aunt asked me for the recipe.

This is a great recipe for s'more cookies, but I also use it as my sugar cookie recipe. This dough is so soft and delicious! I make the dough as directed, chill, and then roll it out a little thicker than indicated. I cut the dough into cookies using cookie cutters and bake 10 - 12 minutes at 325 degrees. I top them with butter icing.

Rated 4 out of 5 by from i used too much creme in between maybe, they kept rolling off of eachother. i used too much creme in between maybe, they kept rolling off of eachother. so next time i will use less. also, wondering how could i make the cookies just a bit sweeter? this is by far the best sugar cookies i have ever made so thank you very much, just would like the dough a bit sweeter...can i add more powdered sugar?

Rated 4 out of 5 by from I thought these cookies were really good. I thought these cookies were really good. They are really easy to make, but they are time consuming. I had the same problem as other users...the marshmallow melted pretty easy. It wasn't too warm out, but by the time I got where I was going the cookies were pretty messy.

The cookies looked great when I mixed them and then once they were baked and cooled; the cookies were soo dry. The cookies were soft but very dry and not sweet. I am not going to make this recipe again.

Just a suggestion on how to make the cookie sweeter, use powdered sugar to dust your work surface rather than flour. I've done this for cutout cookies before and it did make them sweeter.
