  • Chop 6 grahams coarsely; set aside. Finely crush remaining grahams; mix with cream cheese, sugar and vanilla until well blended. Use 2 Tbsp. of the cream cheese mixture to evenly coat each marshmallow. (Coating will be thin.)
  • Microwave semi-sweet and white chocolate in same microwaveable bowl on HIGH 2 min. or until chocolates are completely melted and mixture is well blended, stirring every 30 sec.
  • Dip 1 lollipop stick about 1/2-inch deep in chocolate; insert chocolate-covered end into center of 1 coated marshmallow. Repeat with remaining marshmallows. Dip 1 marshmallow in remaining melted chocolate; shake gently to allow excess chocolate to drip back into bowl. Dip marshmallow in chopped grahams, turning to coat bottom and part-way of side of each. Place in shallow waxed paper-lined pan. Repeat with remaining marshmallows.
  • Refrigerate 1 hour or until firm.

Rated 1 out of 5 by from This recipe needs a serious overhaul. This recipe needs a serious overhaul. First, why buy popsicle sticks? Just use pretzel sticks, it makes it easier and edible. Second, what on earth is the point of the difficult cream cheese mixture? The marshmallows are delicious dipped in chocolate and rolled in the graham crackers. This eliminates all the fuss and makes this recipe much easier.

Rated 2 out of 5 by from This is so messy and time consuming! This is so messy and time consuming! I ended up revising it after the first time making it because I liked the idea of it. I actually melted a little butter and fluff together, added it with the cream cheese and graham crackers, and then put them in the fridge to harden up, then dipped them in chocolate, it was DELICIOUS! :)

I read the recipe so I had an idea of what was involved and the time it would take. I dont see what was so hard or messy about it. I must be the odd one.I even had no trouble finding the sticks. They were right next to the candymaking products.

Well, coating the marshmallows with the cream cheese mixture is difficult, finding a store that sells Popsicle sticks NOT easy. BUT everyone loved this, they go very quickly, but they are time consuming to make. Not something i would do more than twice a year! ENJOY!!
