  • Heat oven to 325°F.
  • Crush 8-1/2 crackers to form fine crumbs; break remaining crackers into rectangles. Place cracker crumbs in medium bowl. Add butter and sugar; mix well. Press onto bottom of 9-inch springform pan. Bake 12 min. or until lightly browned. Cool completely.
  • Meanwhile, microwave chocolate and COOL WHIP in microwaveable bowl on HIGH 2 to 2-1/2 min. or until chocolate is completely melted and mixture is blended, stirring after each minute. Let stand 15 min. Spread chocolate mixture over crust. Stand cracker rectangles, top-sides facing out, around edge of pan, pressing gently into chocolate mixture to secure. Freeze 20 min. or until filling is firm.
  • Cover with ice cream. Freeze 4 hours or until ice cream layer is very firm. When ready to serve dessert, reserve 2 cups marshmallows. Microwave remaining marshmallows and milk in large microwaveable bowl on HIGH 1 min. 15 sec. or until marshmallows are completely melted and mixture is well blended, stirring after 1 min. Cool 10 min.
  • Heat broiler. Place dessert on baking sheet; top with melted marshmallow mixture and reserved marshmallows. Broil, 6 inches from heat, 1 min. or until marshmallows are golden brown. Remove rim of pan before serving dessert.

Just a tip when doing the second step of chocolate and cool whip, melt chocolate a little first before adding cool whip, it blends better. Also on the border I used two crackers joined instead of singles(only broke a full sheet once), and it was more sturdy and made perfect serving size. Too afraid to put whole cake under broiler so I baked marshmallows on a parchment lined cookie sheet at 400 for just a few minutes until nicely browned. Scooped them off with plastic spatula and put on top. Used chocolate vanilla swirl ice ***** and it was perfect. Homemade ice ***** would be amazing.

It looked just like the picture. I also added two very ripe thinly sliced bananas over the chocolate before the ice cream. Husband doesn't care for chocolate ice cream, so I used a S'more ice cream, and it was delish! I made the crust and chocolate the night before and finished it the next morning to eliminate some of the wait times too. Broiled right before serving, so the top was warm and had that great toasted marshmallow aroma! Yummy!

The cake was very good, in spite of the fact that after adding the chocolate layer and arranging the graham crackers around the sides, I dropped the pan trying to put it in the freezer! Chocolate on the floor, graham crackers falling every which way. I reassembled those, and continued with the recipe! The only thing I didn't like was all the waiting time at various steps in the recipe.

Also the recipe should refer to cracker sheets, not crackers. Definitely a make-a-day-ahead dessert. I would place in freezer after toasting marshmallows; top of chocolate ice cream was a little soupy. Also ours didn't look as pretty because chocolate seeped up to the face of the crackers. Must have pushed crackers into chocolate too much
