Smothered Chicken with Brown Rice

  • Cook and stir bacon in large nonstick skillet on medium heat 5 min. or until crisp. Remove bacon from skillet; drain on paper towels. Discard drippings from skillet. Add chicken, cook 1 to 2 min. on each side or until browned; cover. Cook 8 min. or until chicken is done (165ºF). Transfer chicken to plate; cover to keep warm.
  • Add onions to skillet; cook 5 min. or until tender. Stir in carrots and 3/4 cup broth; cover. Simmer 10 min. or until vegetables are tender. Reserve 1/3 cup vegetables.
  • Place remaining broth, reserved 1/3 cup vegetables and Neufchatel in blender; blend until smooth. Add sauce and reserved chicken to vegetables in skillet; cover. Cook 2 min. or until heated through. Spoon rice onto serving plate; top with chicken mixture, sauce and bacon.

Special Extra

Season chicken with 1/2 tsp. black pepper before adding to skillet.

Rated 4 out of 5 by from I tried this recipe last night. I tried this recipe last night. My family enjoyed it and I will definitely make it again. I did change the directions slightly. After browning the chicken, I added the broth, carrots and onion to simmer instead of removing the chicken and then cooking the vegetables. I was on a time crunch! I also blended the cream cheese and broth otherwise I struggle to have it blend properly. My other recommendation would be to have a slightly ticker sauce by adding a little flour.

I don't really like cooked carrots, so I cut the amount in half & subbed in italian & gold zucchini. I also sauted fresh garlic and seasoned everything with some onion & garlic salt. To liven up the rice I added a bit of snipped chives & parsley (from my garden). It's a great recipe, and one that most people will enjoy subbing in those things that their family will eat & enjoy.

Rated 4 out of 5 by from This was a huge hit with my boyfriend. This was a huge hit with my boyfriend. I did not use the blender, what a pain to have to clean it! I let it simmer uncovered a bit, and then added flour to the liquid until I felt it was thick enough. It's probably at least a little bit healthier to thicken it up by blending the veggies, but this worked well too and it tasted great.

This recipe was good, but it lacked flavor (other than the carrots) My family added salsa or Tapito to their plates, I ate mine as is so I could rate it. Next time I make it I will add fresh garlic and some other spices to give it more flavor - it smelled wonderful cooking, but all we were disappointed in the flavor - or lack of it

Rated 2 out of 5 by from The taste on this was ok, and it was fairly easy to make. The taste on this was ok, and it was fairly easy to make. I really liked the crumbled bacon. But the "gravy" wasn't very thick, and it seemed like there were way too many carrots in the recipe. It was weird to have that many in proportion to the other ingredients. Not horrbile, but we probably won't be making this again.

I did not have chicken broth so I used bullion and it did not thicken up as well, however, we loved it. The next day I cooked egg noodles and mixed the left over sauce and veggies with that and it was good as well. I believe I will make it with noodles next time not rice.

I used a few slices of ham instead of the bacon, diced & cooked in pam, & I made meatballs out of ground turkey instead of using the chicken. The sauce was quite good, & my whole family enjoyed it.

Rated 4 out of 5 by from Very good. Very good. The recipe needs a little tweeking. The chicken needs to be seasoned as suggested before. The amount of sauce needs to be doubled. I also added 1/2 cup of sour cream to the sauce to add some tangyness - very good! We will make this again!
