What You Need

slices OSCAR MAYER Bacon, chopped

small boneless skinless chicken breast halves (1-1/2 lb.)

large onion, chopped

large carrots (1-1/2 lb.), thinly sliced

can (14-1/2 oz.) fat-free reduced-sodium chicken broth, divided

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed

cups hot cooked brown rice

Make It

COOK and stir bacon in large nonstick skillet on medium heat 5 min. or until crisp. Remove bacon from skillet; drain on paper towels. Discard drippings from skillet. Add chicken, cook 1 to 2 min. on each side or until browned; cover. Cook 8 min. or until chicken is done (165ºF). Transfer chicken to plate; cover to keep warm.

ADD onions to skillet; cook 5 min. or until tender. Stir in carrots and 3/4 cup broth; cover. Simmer 10 min. or until vegetables are tender. Reserve 1/3 cup vegetables.

PLACE remaining broth, reserved 1/3 cup vegetables and Neufchatel in blender; blend until smooth. Add sauce and reserved chicken to vegetables in skillet; cover. Cook 2 min. or until heated through. Spoon rice onto serving plate; top with chicken mixture, sauce and bacon.

Seems like there was too many carrots and sauce was thinner than I expected it to be. Bacon saved this recipe but overall not very good. We will not make this again.

The taste on this was ok, and it was fairly easy to make. I really liked the crumbled bacon. But the "gravy" wasn't very thick, and it seemed like there were way too many carrots in the recipe. It was weird to have that many in proportion to the other ingredients. Not horrbile, but we probably won't be making this again.

This is a great recipe. My whole family loved it, even my kids raved about it. I blended more than 1/3 cup veggies because the sauce was too thin otherwise. I can't wait to make it again.

This is a keeper recipe. I seasoned the chicken with my favorite seasoning and only used 1/2 an onion. Mushrooms might also go well with the dish. The sauce didn't thicken so, I used a little cornstarch & water to thicken.

I did not blend some of the vegetables as instructed and both my husband, grown son as well as myself loved the recipe. I will make more bacon next time since it definitely sets the dish apart from the usual chicken dish. It is great!

This was a huge hit with my boyfriend. I did not use the blender, what a pain to have to clean it! I let it simmer uncovered a bit, and then added flour to the liquid until I felt it was thick enough. It's probably at least a little bit healthier to thicken it up by blending the veggies, but this worked well too and it tasted great.
