What You Need

medium  yellow onion, cut into chunks
2
 green sweet banana peppers, halved, seeded
6
 sweet chili peppers, halved, seeded
6
cloves  garlic, peeled
6
 recao leaves
1/2
cup  loosely packed cilantro leaves
1/2
tsp.  dried oregano leaves

Make It

PLACE all ingredients in food processor; cover. Process until well blended.

Make Ahead
This sofrito sauce can be frozen for later use. Place 2 Tbsp. sofrito sauce in each cube of an ice cube tray. Wrap filled tray with foil or freezer wrap; freeze. Once frozen, remove sofrito cubes and place in freezer bag for prolonged storage up to 1 year. Frozen sofrito cubes can be used in recipes without thawing first. Makes 16 cubes.
Use Your Blender
If using a blender instead of food processor, add 2 Tbsp. oil or water before blending.
Variation
Prepare as directed, omitting the recao leaves, increasing the cilantro to 1 cup and substituting 1 large green pepper, seeded and chopped, for the banana and chili peppers.
