South-of-the-Border Snapper

Red snapper is marinated in lime juice, tequila, cilantro and salad dressing mix, then grilled for a light and zesty entree.

What You Need

env. GOOD SEASONS Zesty Italian Dressing Mix

1/4

cup lime juice

1/4

cup oil

Tbsp. tequila

Tbsp. chopped cilantro

1/8

tsp. ground red pepper (cayenne)

lb. red snapper

Make It

MIX all ingredients except fish until well blended. Reserve 1/4 cup of the dressing mixture; refrigerate until ready to use.

POUR remaining dressing mixture over fish in shallow glass or plastic dish; cover. Refrigerate 30 min. to 1 hour to marinate. Drain; discard marinade.

PREHEAT greased grill to medium-high heat. Grill fish 10 to 12 min. or until flakes easily with fork, turning and brushing occasionally with the reserved 1/4 cup dressing mixture. Serve over hot cooked rice garnished with lime wedges, if desired.

Use Your Broiler

Marinate fish as directed. Drain; discard marinade. Preheat broiler. Place fish on greased rack of broiler pan 3 to 5 inches from heat. Broil 10 to 12 min. or until fish flakes easily with fork.

Substitute

Prepare as directed, using halibut fillets.

I used Tilapia instead and it tasted really good. I also broiled it, but the thinner side of the fish came out a little over done. This is a great recipe to add to my Tilapia collection.

Marinated over night turned out wonderful! cooked in foil with greenbeans served with rice.

there is not enough acid and the spices overpower the flavor of the fish.

Trying to eat healthier and this is a good choice. I broiled instead of grilled. Grilling would probably add a little more flavor.

This is very easy to make. Great taste , I made pasta on the side. Makes a great meal......ENJOY !!

I have used this recipe with Snapper,Tilapia and Salmon. I have also tried using aluminum foil packets and grilling the fish(with some of the marinate enclosed.) I have gotten several compliments and have had to print out the recipe for several guests.

this was a great recipe. The fish was moist and delicious. If you want a less limey fish, don't baste the fish too late in the cooking.

This Fish Dish was Fabulous, I left out the Tequilla, and let it marinate for about three hours. My daughter said it was delicious.
