For a change of pace, prepare using chicken broth and substituting 1 lb. boneless skinless chicken breasts, cubed, for the ground beef.

As with many cooks, I modified the recipe slightly. I used no salt added tomatoes w/jalapenos, brown rice, and fat free Kraft shredded cheddar. 1/8 c of taco seasoning while browning the ground beef. It was awesome!
This is so yummy. I love stuffed bell peppers, and that is exactly what this dish tastes like--but it's a lot less work.
