  • Heat oven to 375ºF.
  • Add seasoning mix to chicken in medium bowl; toss to evenly coat.
  • Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until lightly browned. Spoon into 1-1/2-qt. casserole; cover with layers of beans, corn, onions and salsa.
  • Bake 20 min. Top with cheese; bake 5 min. or until melted. Serve over rice.

You can't even taste the brown rice, so the family doesn't know they are eating healthy rice not white rice. May be a bit to salty for some. I am vegetarian so I made it with extra beans and used my soy chicken strips.

Rated 5 out of 5 by from An absolutely fabulous dish. An absolutely fabulous dish. Reminiscent of a Mexican smothered chicken. Out of pure laziness, I left the bones in the chicken thighs but did remove the skin. Definitely serve on top of brown rice rather than having rice on the side. Will be making regularly.

Rated 5 out of 5 by from Fantastic! Fantastic! So yummy and tasty - Easy to make and a big hit with the family. I used the whole package of the taco seasoning and doubled up on the corn, black beans, and salsa. Tonight we are going to eat the left overs on a bed of Tostito Chips. Yummy!

Rated 5 out of 5 by from YUMMY! YUMMY! Family made me make again two days after the first time! I used an entire can of corn(drained)and an entire packet of taco seasoning for xtra flavor and cut up small pieces of chkn breast instead. Definitely going in my fave recipes box!!

I served it over white rice and put a spoonful of sour cream on top. I left out the corn and onions since no one likes them.
