Rated 4 out of 5 by from i made this for lunch once and it was really good. i made this for lunch once and it was really good. i would suggest (if you have four or more people) to double it. i had four people in my family and i doubled it & it was just enough! i got a mild salsa, but i thought it would've been better with medium or hot. next time, i plan on making my own chicken & rice soup!

I used velveta cheese instead of the cheddar cheese, substituted milk for the water, and added some leftover rice I had which made it more of a thick cream soup. it was creamy and delicious and my kids loved it.

I also added more salsa and I think the next time I make it I'm going to add more rice... but it was very easy and very tasty!
