  • Heat large nonstick skillet sprayed with cooking spray on medium-high heat. Add peppers and onions; cook and stir 5 min. or until crisp-tender. Meanwhile, rub both sides of chops with combined seasonings.
  • Add chops to skillet; cook 2 to 3 min. on each side or until browned. Add beans and tomatoes; cover. Cook on medium-low heat 5 min. or until chops are done (160ºF).
  • Top with cheese; cook, covered, 2 to 3 min. or until melted. Serve over rice.

Rated 5 out of 5 by from Freaking delicious! Freaking delicious! I used boneless butterfly chops which made it just as good in my opinion and used black beans instead of kidney beans. YUM YUM YUM. The leftover salsa mixture (as I only had 2 boneless pork chops) I froze and plan on putting it in chili.

I used boneless pork loins marinated in italian dressing. added chopped yellow/red peppers/onion. added hunts diced tomatoes w/ green peppers, celery, onion. added green chilies. after cooking, I put this on top of rice a roni red beans & rice. Delicious!

I used the black beans as one of the raters suggested, and taco seasoning on the chops insures of just chili powder and garlic...it was really, really good! I give it five stars, but my husband thought it was a little spicy...I WILL make it again!
