  • Cook bacon in large saucepan until crisp, stirring frequently. Remove bacon from pan, reserving 2 Tbsp. drippings in pan. Drain bacon on paper towels.
  • Add potatoes, onions and celery to drippings; cook and stir 2 min.
  • Stir in soup and milk; bring to boil. Simmer on low heat 8 min., stirring occasionally. Add remaining ingredients; cook 5 min. or until process cheese food is completely melted and potatoes are tender, stirring occasionally.

After a day of winter fun, enjoy a serving of this tasty soup.

Garnish with chopped fresh cilantro and a sprinkling of additional cooked and crumbled bacon.

I logged in to get the Loaded Baked Potato Soup recipe a friend made, but when I saw this I decided to try it instead. This was a disappointment. I substituted cheddar cheese, green chiles, and some cayenne for the processed cheese product, as we don't like to buy that sort of food. Well, that must be the cornerstone of the recipe, because I had to tweak things from there to make it worth serving to my family. So if you are comfortable with buying the cheese product, I would go ahead and make this. Otherwise, try something else. :)

This was my first attempt at making a soup and I wasn't sure it was going to be good or filling. Boy was I suprised!! Easy to make and SO SO SO Delicious. My husband and I both had a full bowl and it was filling enough that we didn't even get seconds - leftovers for the next day! I couldn't find the cheese cubes so I used pepperjack cheese (10oz block) and almond milk instead of regular milk. I am definitely making this again!!

I used a bag of southern-style hashbrowns instead of cutting up the potatoes, which really saved a good bit of time. I also used half the cheese in the soup and used regular Velveeta because some of those eating it can't have spicy food. Instead, I had Salsa Jack shredded cheese available to sprinkle on the soup. I got lots of favorable comments.

I've made this a few times for company, everyone loves it...I've learned to bring extra copies of the recipe with me when I bring it. I usually cook up and toss the whole pack of bacon in, and if I only have velveta, then toss in some cajun spice and chili powder so I don't have to run to the store special for the cheese. SO easy, and it's a great use for all of those potatos that need to be used up.

I did modify it slightly: added a little more bacon, used cojack shredded cheese instead of the pepper cheese food, added some seasoning salt and used good quality mixed veggies w/corn instead of just corn. Overall, the basis of this recipe is great and does well with little to no modifications. It is easy and definitely better than canned and most resturant-quality versions!

Rated 5 out of 5 by from Wow! Wow! This was fantastic. I used Simply Potatoes from the refrigerated section of the grocery. It sped things up since those potatoes are already fully cooked and diced. Also used already cooked bacon (thick cut). I have no idea what the Hoffman's cheese is, and couldn't find it, so I used Velveeta Pepper Jack, which was devine. Highly recommend this recipe.

I work on my counties election board and I made this chowder for our election day lunch. I doubled the recipe and was greatful that I did because it wasn't just lunch it was dinner to!! Everyone loved it!! I have already given the recipe out numerous times and have also emailed it to some friends, it really hit the spot! Thanks for a great recipe!

Rated 5 out of 5 by from Very good! Very good! My family even liked it which was amazing! Easy to adjust to your liking. I did add chicken broth while cooking the potatoes since I used chicken bacon with very little drippings. Great "base" recipe so it's easy to add your own favorites or adjust to make a lighter version. I'll definitely make it again!
