The topping wasn't to my liking, nor my husbands. My seven year old daughter finished her serving, but she wasn't too fond of it either. The rice mixture was somewhat like mush.
I made this recipe, but tweaked it with a few of my own ingredients. I added a can of drained Mexicali corn, 1 T. dried minced onion, and about a half package of taco seasoning (it was a little too limey for our tastes and the taco seasoning helped tame it some). My husband loved it!
We like chili lime flavor and chicken, so excited to find this recipe. I'll be trying this one on the weekend. It looks easy and yummy.
