This is a great go-to recipe for a change of pace from other Mexican-type dishes (fajitas/tacos). Tonight, I decided to make it ahead of time and chill it to make a Southwestern Pasta Salad :) I just added the extra cheese, cilantro and lime juice after it had chilled!
This was fine. Kind of like a taco in a pasta bowl. Everyone enjoyed it. I would make it again, it is easy. Easier to eat than tacos, less mess!
I have made this several times, but today I didn't have ground beef so I used meatballs still came out just as good. My daycare kids actually like it better with the meatballs.
