  • Brown meat in large skillet sprayed with cooking spray; drain. Stir in salsa, zucchini and chili powder; simmer on low heat 10 min., stirring occasionally. Meanwhile, cook pasta as directed on package.
  • Stir corn and 1/2 cup cheese into meat mixture; cook 3 min. or until cheese is melted, stirring frequently.
  • Drain pasta; place in large bowl. Add meat mixture, lime juice and cilantro; mix lightly. Top with remaining cheese.

I used chicken instead of beef, put in less salsa and more chili powder and lime (plus a touch of salt), and I added black beans, fresh tomatoes, and frozen corn instead of canned. My roommates loved it! I'll definitely make it again.

You don't expect the lime flavor, so it's definitely an unexpected surprise. I did think that the cilantro was a bit overpowering. I would recommend using less than the called for amount. We will definitely make this again!

This would be good to bring to a potluck sort of situation..the lime gives the "hmm whats that" factor!! Yum Yum, it will be fun to expieriment with different flavors and meats!

Tonight, I decided to make it ahead of time and chill it to make a Southwestern Pasta Salad :) I just added the extra cheese, cilantro and lime juice after it had chilled!

This was a great recipe - something a little different than just your typical spaghetti or tacos. Also very easy to make! The only corn I had was salted but it still tasted fine. You can eat it with tortilla chips for extra texture =) Husband approved!
