  • Heat oven to 400ºF.
  • Combine coating mix and chili powder in shaker bag. Use to coat chicken as directed on package. Place in 8-inch square baking dish.
  • Bake 20 min.
  • Sprinkle with cheese. Bake 10 min. or until chicken is done (165ºF) and cheese is melted.

Serving Suggestion

Serve with a salsa-topped baked potato and your favorite steamed vegetable.

I did make one change, I bought a packet of the Taco Bell taco mix and rubbed the chicken breast in it and refrigerated it early morning and prepared the dish as instructed at the end of a work day. I served it with the Refried Bean Supreme and a packet of Mexican Rice.

My husband LOVED it, but it wasn't spicy enough. I make it often enough now I hardly need the recipe. I don't measure the chili powder I just eye ball it. Also I just sprinkle cheese (mexican blend) on, without measuring. Delicious!

The spicey coating just didn't do much for the chicken....the flavors didn't meld. I tasted bland chicken and the tasty topping. I think I'll try marinating the chicken breasts first to get some flavor into the meat.

I recomend this recipe to anyone who is in a rush to put food on the table because it is the quick, easy and healthy way to go!

We followed the recipe including steaming freash brocclli and cauliflower with the salsa on the potatoes and it turned out great!

Rated 4 out of 5 by from We had a guest for dinner and everyone really liked it. We had a guest for dinner and everyone really liked it. It's very flavorful and super easy to make. It is a little dry, however. It would probably be even better with salsa or picante sauce poured over the top after it's served. Yum!
