Size Wise

Southwestern flair is added to this classic salad that, at 14 servings, is large enough to serve a crowd.

How to Hard Cook Eggs

Sometimes referred to as hard-boiled, hard-cooked eggs are easy to prepare and aren't really "boiled." Place eggs in single layer in saucepan. Add water to completely cover eggs at least 1 inch. Bring to boil; cover. Remove from heat. Let stand 20 min; drain. Immediately run under cold water to cool.

Food Facts

To keep avocado slices from turning brown, toss with 1 to 2 Tbsp. lemon or lime juice before adding to salad.

Rated 4 out of 5 by from This was a very nice combination of ingredients. This was a very nice combination of ingredients. I would go easy on the salsa and just put it on the beans. I served the ranch dressing on the side.

Rated 5 out of 5 by from My husband ate this salad, which is all the criteria I have for a good salad. My husband ate this salad, which is all the criteria I have for a good salad. I know it is not his favorite, but he ate everything in his bowl. I loved it. I liked the dressing the most. A light dressing does not go well with the chicken, bacon, eggs, and beans. The creamy dressing is just perfect.

Rated 5 out of 5 by from My whole family loved this! My whole family loved this! Even my husband who has stated that salad for dinner is not enough to fill him up. I made it even easier by buying "ready to serve" bacon. This was enough to make 2 LARGE plates for my family. This will be served in my regular monthly dinner menu.

Rated 2 out of 5 by from Well the salad was beautiful. Well the salad was beautiful. I ommitted bacon and added Kalamata olives. What I didn't like was the dressing. It didn't complement the food at all. A light dressing would have been much better. I will make this again, but will use another dressing

This recipe was a hit with my husband-but instead of using the ranch/salsa mix-I used 1 personal sized container of non-fat greek yogurt, the juice of 1/2 lime and 2 tsp of Adobo sauce-it was AMAZING!

Rated 5 out of 5 by from Very, Very Good! Very, Very Good! I took this to a party and everyone raved about it! Be careful to really dry the lettuce, as there was a lot of liquid in the bottom of the bowl. But, despite that, it was GONE!
