  • Heat dressing in large saucepan on medium-high heat. Add chicken and onions; cook 7 min. or until chicken is done, stirring occasionally.
  • Stir in beans, broth, chiles and cumin. Bring to boil. Simmer on medium-low heat 10 min., stirring occasionally.
  • Serve topped with cheese and cilantro.

Special Extra

For spicier chili, add 1/2 tsp. ground red pepper (cayenne) along with the beans, broth, chiles and cumin.

Creative Leftovers

Have some leftover turkey? Substitute 3 cups chopped cooked turkey for the cooked fresh chicken.

For A Thicker Consistency

Mash some of the beans with a fork during the simmer time.

The recipe was OK , I DID substitute a couple of ''Beer-Can-Grilled'' chickens ,and pulled off all of the skin,put them in a baking dish for the''boyz'', I also doubled the recipe ,and brought out the divided-Lazy-Susan dish for ''Extra-Condiments'', Green Chiles,extra Kraft Monterey Pepper-Jack cheese, extra cilantro, crushed red-pepper flakes, a can of black olives ,and a couple other items to fill up the dividers . An iceberg lettuce bowl with the best ingredients was also served,and Used Kraft SunDried Tomato salad dressing ,and a balsalmic vinegar&EVOO for the salad as an extra salad dressing choice .

Rated 5 out of 5 by from Instead of dressing I use olive oil. Instead of dressing I use olive oil. I bake or grill my chicken first. I make this with leftovers. I use Great Northern beans. You can use broth, but I use one can of cream of chicken and that same can full of water. Either one makes for a good soup. No chiles for me. No cilantro. Add crushed red peppers, a shake of basil, a shake of parsley, some soul seasoning, some minced garlic (or garlic powder). Instead of the small onion, I use the seasoning blend you find in the grocery store (bell pepper, onion & celery). Awesome recipe!

Rated 5 out of 5 by from I have made this several times for my family and they love it. I have made this several times for my family and they love it. I usually make it the day before and it taste even better then the day that it is prepared. My husband loves to stir in the cheese to make it a thicker soup/chili and then puts cheese on top and bakes it in the toaster oven so the cheese gets melted and crusty on top. I leave out all this cheese to keep it lower in fat for myself, but it tastes great either way.

Rated 5 out of 5 by from I've made this and variations of this many times. I've made this and variations of this many times. It is so much better with regular ground turkey. Ground sausage is another option. I also add garbanzo beans, navy beans, and white kidney beans and just increase the amount of chicken broth, chiles and cumin, etc. (Can also add wild rice.) There are so many different ways to prepare that I've never ended up with the same pot of chili twice.

Rated 5 out of 5 by from This chili rocks! This chili rocks! I just cut up the raw chicken and threw EVERYTHING in one big pot and let it cook- worked out great! I always add a bit more cumin and chili powder because I like the spiciness. Have left out the peppers before and it was good... even substituted some green pepper and it turned out great! Corn bread croutons (like the ones from Applebees) taste FANTASTIC with this dish!

Rated 5 out of 5 by from This is so good! This is so good! Easy to make and delicious. I forgot to add the cumin and cilantro and it still came out very good. I did mash up some of the beans to make it thicker. This is even good heated up the next day. Definetly cut the chicken into bite size pieces so you won't have to as you are trying to eat it. I would make this recipe again and it has become one of our new favorites.

I start with raw chicken on occasion, but it's usually my "go to" recipe to stretch leftover chicken. I use two times the dressing, beans, cumin and chilis and add S&P to taste. Also, to help thicken, I don't rinse the beans -- just lightly drain. Super easy and fast with impressive results!

Rated 5 out of 5 by from Wow! Wow! My husband and I both loved this recipe, it was delicious. I thickened the chili with cornstarch and served it along with couscous. I didn't have a can of chilis but I did have a jar of jalpenos which I chopped and then added some of the liquid, it was a lot spicier than I intended but in a good way. I can't wait to make this again, next time I won't forget the cheese.
