This quick easy recipe was very tasty, made especially so by using leftover homemade marinara sauce I had on hand instead of the jarred sauce called for (no additives, preservatives, or artificial flavors). I also used olive oil to saute the vegetables and extra marinara sauce for more flavor. For even quicker prep, buy the vegetables needed from the salad bar at your local grocery store.

We had zucchini, squash, mushrooms, bell pepper, and onion on hand so that's what we sauteed in some EVOO and garlic. Instead of spaghetti sauce I used a can of diced fire roasted tomatoes and a little tomato sauce to thicken it up. To add a little flavor I added a little salt, pepper, dried oregano, and crushed red pepper.

The only thing is that the spaghetti sauce was a little tart without any meat added. I'll have to try different varieties of sauces next time.

I am vegetarian and always looking for recipes that my meat-eating husband and I both enjoy. This is one of the best I have found.

Rated 2 out of 5 by from I like the recipe with simple ingredients. I like the recipe with simple ingredients. It is little dry and bland. You can add more spaghetti sauce and 1/2 tsp of dry oregano and pinch of black pepper to make it more juicy and flavoured.
