  • Pierce squash several times with fork or sharp knife to allow steam to escape. Microwave on HIGH 12 min. or until tender, turning over after 6 min. Cool 5 min.
  • Cut squash in half. Remove and discard seeds. Use fork to scrape insides of squash to form strands; place in large bowl.
  • Add cheese and butter; toss to coat.

Special Extra

You may want to add some s&p and other spices and definitely top with a nice, tangy pasta sauce. I added ground beef and mushrooms to the sauce and served it on top of the spaghetti squash and it was delicious. No complaints at my house. Also, when I microwaved the squash, I put it in a glass dish with water in the bottom to make sure it would cook in the microwave with some moisture.

As far as taste goes, I don't think my husband and I are fond of spaghetti squash - it was good, but we prefer regular pasta. As far as cooking method, this was very quick and easy, the squash made beautiful strands. I would recommend, however, that you make sure you poke the fork as far in as possible to break the outer layer so that the steam escapes as it should. (I did that after the first 6 minutes, and I placed it in a shallow dish while microwaving.)

This recipe, while being a little bland for me, was quite good once I added my usual garlic. My 6 year old and 2 year old loved the unusual flavor of the squash and never knew it wasn't another form of spaghetti. I had to cook the squash a bit longer (about 10 minutes or so) for my liking but it depends on how well done someone likes their vegies. I will continue to use squash for years to come.

Rated 4 out of 5 by from I hate veggies and was scared to try this. I hate veggies and was scared to try this. I made the squash and some spaghetti sauce. I also made some noodles just in case I didn't like the squash. I ended up mixing the squash with the noodles, topped it with sauce, and it was great! It tasted like my usual spaghetti. My 3 year old (also a veggie hater) ate all of hers.

Either was too crispy or just not tasty, however, I did this in microwave then removed the squash and put margarine and parmasian cheese and put in oven for about 15 minutes, covered,and then added my spahgetti sauce and it was delicious.......

Spaghetti squash is a healthful alternative for diabetics who cannot eat much pasta (because of the high carbohydrates in pasta). Low carbs and high fiber (higher than pasta). I substitute spaghetti squash whenever I want pasta and meatballs. This is certainly a welcome dish on a weeknight after work.

Rated 4 out of 5 by from i have also used this squash in place of pasta noodles for years. i have also used this squash in place of pasta noodles for years. my hubby isn't fond of squash but never knew that's what he was eating the 1st time i prepared this for him. i love to serve it as a side with lots of butter and garlic or as a main with my homemade spaghetti sauce over it.

I had never made anything with spaghetti squash before and was hesitant because I thought it would be time consuming. However, it was so easy! I loved how the squash was crunchy. This made a great side dish to the parmessan chicken recipe also on this site. Will make this a monthly regular!
