  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in club soda. Refrigerate 1-1/2 hours or until thickened.
  • Measure 1 cup gelatin into medium bowl; reserve for later use. Stir strawberries into remaining gelatin; spoon into 8 champagne glasses or dessert dishes.
  • Beat reserved gelatin with mixer on high speed until doubled in volume; spoon over gelatin in glasses. Refrigerate 3 hours or until firm.

Variation

Prepare using JELL-O Lemon or Orange Flavor Gelatin. Or, use any red flavor of JELL-O Gelatin.

Substitute

Substitute seltzer for the club soda.

    I used strawberry gelatin instead of the raspberry gelatin. Everybody loved it. A few people have ask for the recipe and I am glad to give it to them.

    I made this for a friends' engagement get-together and we all enjoyed it a lot. It took my Jell-O a lot longer to thicken before I put in the strawberries and it took a lot longer than 4 hours to gel the right way, so maybe prepare it 6 or more hours ahead of time just to be safe.
