  • Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Refrigerate 15 minutes. Gently stir in cold club soda. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Gently stir for 15 seconds. Stir in pears and raspberries. Pour into 6-cup mold sprayed with cooking spray; cover.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin mold in refrigerator.

Substitute

Substitute 2 pkg. (4-serving size each) JELL-O Sparkling Wild Berry Flavor Sugar Free Gelatin for 1 pkg. (8-serving size) gelatin.

I really enjoyed this recipe; I used sugar free jello since I am diabetic and the second time I used ginger ale in place of the club soda; I liked it much better. I doubled the recipe and used a cup of each fruit; gave a marvelous taste and a beautiful look. I personally appreciate Kraft foods coming up with more and more recipes that diabetics can eat. We don't feel like we are missing out on anything.

Rated 5 out of 5 by from I cannot find the sparkling jello anywhere anymore. I cannot find the sparkling jello anywhere anymore. So, I substituted the Blackberry Fusion jello instead. I also used ginger ale instead of club soda. The result was AMAZING! Very refreshing with a little "zing" from the ginger ale. Making it again to go with our Easter dinner tomorrow.
