  • Stir boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Add seltzer, lemon zest and juice; stir. Pour into 9-inch square pan; cover.
  • Freeze 3 hours or until frozen. Remove from freezer; let stand at room temperature 10 min. to soften slightly.
  • Beat with electric mixer or blend in blender on high speed until smooth. Spoon into six dessert dishes. Store leftovers in freezer.

Special Extra

Garnish with lemon slices and fresh mint sprigs just before serving.

Rated 5 out of 5 by from I have tried several different variations on flavor. I have tried several different variations on flavor. You can do this with any flavor Jello and flavored water you prefer. Our fave is Peach. After mixing the ingredients, I pour it in ice cube trays. After they freeze completely, I remove the cubes and put them in freezer bags for later. I just pop 6 cubes in the food processor for a quick, low carb, low cal, no sugar treat for two! Did I mention Guilt-Free?

It took way longer than 3 hours to freeze, once it was frozen, I let it set out for 10 mins. but when I started scraping it with the fork - it was stringy. I don't have a clue why it didn't turn out - I followed the directions to the letter. Maybe I will have to try again....

Rated 4 out of 5 by from Enjoyable and light tasting. Enjoyable and light tasting. I unfortunatly had to make it with regular lemon JELLO as the light doesn't seem to be available in my area, but it turned out well, if higher in calories. The recipe really only serves 4 comfortably.
