  • Combine 1/4 cup rice, 1 Tbsp. dressing and 1/2 tsp. soy sauce in each of 4 microwaveable soup bowls.
  • Add 1/2 cup of each of the remaining ingredients to each bowl; stir. Cover with waxed paper.
  • Microwave on HIGH 5 to 7 min. or until heated through. Let stand 5 min. before serving.

Keeping it Safe

Carefully remove the hot filled soup bowls from the microwave since the soup and the bowls will be hot!

    DELICIOUS! I used lo mein noodles instead of rice and made it one big pot on the stove. So easy and so quick--about 15 mins total!! Everyone loved it.

    I also cooked brown rice and added it after I made the broth and veggies. I had already cooked some chicken thighs with lite Zesty Italian dressing so I added a little of that resulting broth and chicken to the recipe broth and it was really great. I put a few peanuts on top of the bowl of soup for a little crunch. Any vegetables would be good in this. We loved it and will definitely make it again!

    I make this all the time without chicken. It's a great way to use up leftover veggies, especially cabbage, which I always seem to have an abundance. It's great if you add Siracha!
