  • Heat oven to 375°F.
  • Cook eggs in skillet sprayed with cooking spray on medium heat 5 min. or until set, stirring occasionally. Remove from heat.
  • Place 2 tortillas in 9-inch pie plate, overlapping as necessary to cover bottom; top with half the eggs and 1/3 each of the cheese and tomatoes. Repeat layers. Top with remaining tortillas, cheese and tomatoes.
  • Bake 10 min. or until ingredients are heated through and cheese is melted.

Sprinkle with 2 Tbsp. chopped fresh cilantro just before serving. Serve with TACO BELL® Thick & Chunky Salsa.

First time to cook it, extremely nervous, having a lot of ladies over for bible study/brunch....It was an easy-to-make HIT!! I will try again, soon. Maybe use the salsa hint, but cooked right into the eggs instead. My 'picky' daughters want one made just for them!!

I used 1/2 Swiss cheese and 1/2 Cheddar cheese Monterey jack cheese mix. sprinkles taco seasoning, salt and pepper. I also used 1/2 and 1/2 cream milk in eggs, mixed together and then cooked. Made the eggs fluffier.

A really delicious and easy (but impressive) recipe that can be multiplied easily to meet your guest list. A few additons (ham slices, picante sauce, etc.) can change the basic flavor to satisfy everyone's taste buds.

The family loved it. You can jazz it up with your favorite spices and seasonings and throw in some cilantro for more color & taste. Try using different cheeses too!

I added a little more cheese to mine, and I also salt and peppered the eggs while cooking. Trying with a condiment would be good, but I think it is super as is. Really fast and easy!!

Rated 5 out of 5 by from This was SUPER! This was SUPER!!! We added a little mayonaise to the bottom of one of the tortillas---it's great! And you can add more or less of everything...more eggs, fewer tortillas, etc. I copied down the recipe and kept it since it's delish and quick!!!

This dish was easy to make but next time I am going to put something spicy in the eggs when I cook them. The flavor was a little bland but besides that it was a great dish. I will certainly make it again, just with a little kick.
