What You Need

1
lb.  uncooked small shrimp, peeled, deveined
1/2
cup  fresh lime juice
1/2
cup  fresh orange juice
1/4
cup  KRAFT Zesty Italian Dressing
1/4
cup  chopped fresh cilantro
1/2
cup  thin matchlike jicama sticks
1/4
cup  slivered red onions
1/2
cup  shredded carrots

Make It

ADD shrimp to boiling water in medium saucepan; cook 3 min. or until shrimp turn pink. Drain; rinse under cold running water. Drain well; place in medium bowl.

MIX juices, dressing and cilantro. Add to shrimp; toss to evenly coat.

ADD remaining ingredients; mix lightly. Refrigerate 30 min.

Substitute
Substitute lemon juice for the lime juice.
Variation
Substitute your favorite fresh seafood, such as scallops, clams, crab and/or chunks of white fish, for some or all of the shrimp.
Note
Ceviche makes a great appetizer to bring to a summer party or barbecue. Simply double or triple the ingredient amounts and serve over saltine crackers or tortilla chips.
