  • Melt butter in large saucepan on medium heat. Add onions; cook 4 min. or until crisp-tender, stirring occasionally. Stir in nutmeg; cook 1 min. Add squash, apples and broth; stir. Bring to boil; cover. Simmer on medium-low heat 50 min. or until squash and apples are tender, stirring occasionally.
  • Cool soup slightly. Add, in batches, to food processor or blender; cover. Process until smooth; return to saucepan. Cook on medium-low heat until heated through, stirring occasionally.
  • Ladle soup into 8 serving bowls. Add 1 Tbsp. cream cheese spread to each bowl; stir gently to swirl.

Substitute

Substitute chopped peeled pumpkin for the butternut squash.

Make Ahead

Prepare as directed, but do not reheat the pureed squash mixture or top with the cream cheese spread as directed. Cool completely. Cover and refrigerate up to 3 days. When ready to serve, pour into saucepan and cook on medium-low heat until heated through, stirring frequently. Top with the cream cheese spread as directed.

I like it better without the apples and double the butter. Also, I use chicken stock instead of vegtable broth and add a little cubed ham. Serve a dollop of sour cream on top and add fresh dill for an extra flair.

This soup was good as long as you added the honey nut cream cheese, but it was very filling... next time I may just have a small portion along with 1/2 a sandwich, instead of just the soup for dinner... great for a side dish or appetizer soup.

Rated 4 out of 5 by from I "really" enjoyed this soup. I "really" enjoyed this soup. It was a little difficult peeling the squash (there must be another way than using a potato peeler!) But the reward of a smooth, tasty, creamy soup at the end was worth it. Perfect match for fall weather.

Rated 5 out of 5 by from I enjoyed this tremendously.. I enjoyed this tremendously.. if you dont mind using the microwave, you can nuke the squash for a couple of minutes and it is really easy to peel. I also added a can of navy beans and 1 teaspoon cardamom.

Rated 1 out of 5 by from Yuck! Yuck! Too bland. I added seasonings (white pepper and garlic salt) to make it tolerable. I think the only good squash soup recipes include cream, thereby making them far less healthy than this recipe.

Rated 2 out of 5 by from I really couldn't taste the 'spiced apple'. I really couldn't taste the 'spiced apple'. And I thought is was a little bland. If I were to make it again I would definately spice it up but not with apples. I couldn't even taste them.
