  • Heat panini grill.
  • Mix avocado and lime juice until blended. Combine chicken, onions, dressing and cilantro; spoon onto 4 bread slices. Top with tomatoes, avocado mixture, cheese and spinach; cover with remaining bread slices.
  • Grill, in batches if necessary, 4 to 6 min. or until sandwiches are golden brown and cheese is melted.

How to Ripen Avocados

Ripen avocados at room temperature. They will ripen faster if they are placed inside a brown paper bag along with a banana or an apple. Close the bag and leave at room temperature until the avocados are ripe.

If You Don't Have a Panini Grill

Heat skillet on medium heat. Cook sandwich 3 min. on each side or until cheese is melted and sandwich is golden brown on both sides, gently pressing down top of sandwich with spatula to flatten slightly as it cooks.
