Spicy Meatloaf with Olive Salsa recipe

If you're in the mood to try a different kind of meatloaf . . . Try this one, with bold and spicy steak sauce, whole kernel corn and chopped black olives.

What You Need

lb.  ground beef
cup  plain dry bread crumbs
cup  A.1. Bold & Spicy Sauce, divided
medium  red pepper, chopped, divided
can  (6 oz.) pitted black olives, drained, coarsely chopped and divided
can  (11 oz.) whole kernel corn, drained
cup  sliced green onions

Make It

PREHEAT oven to 375°F. Mix meat, bread crumbs, 1/2 cup of the steak sauce, the eggs and half each of the peppers and olives until well blended. Shape into loaf in foil-lined 13x9-inch baking pan.

BAKE 1 hour and 10 min. or until cooked through (160°F). Let stand 10 min.

MEANWHILE, mix remaining peppers, remaining 1/4 cup steak sauce, remaining olives, the corn and onions until well blended. Serve spooned over meatloaf.

Keeping it Safe
To thaw frozen ground beef safely, keep meat wrapped and thaw on a plate on the bottom shelf of refrigerator. Never thaw meat at room temperature.
